Cebollitas (Pickled Red Onion)

Serving: Makes 1 pint jar worth

Ingredients:

  • 1 red onion
  • 3 large limes, juiced
  • 1/2 - 1 habanero pepper
  • 3 bay leaves
  • Salt and pepper, to taste (a few pinches is sufficient)

Directions:

  1. Peel red onion and slice thinly using a sharp knife or mandolin.
  2. Thinly slice habanero, removing pith if less heat is desired.
  3. Add all ingredients to a bowl and mix.
  4. Add ingredients from the bowl to a pint-sized mason jar and cover with fresh-squeezed lime juice. Cover and place in fridge; let rest for several hours before using.
  5. Add to tacos, wraps, sandwiches, or any other suitable dish. Lasts several weeks stored in fridge after being opened.
